Yes, there are certainly differences between the iOS and Mac OS apps.

Alright. I guess they figured that not many people will connect their iPhone/iPad with the camera connection kit to a USB DAC, but it could be done of course.

I heard they are working very hard on a new version of their app. Please keep that confidential too! Hopefully it will solve problems like yours.
I am mainly using Roon Labs myself with Tidal on a media player, so I don't know much about the Tidal apps themselves.
